Flapjax Diner is located at 2315 Wilshire Blvd, just up the street from the Santa Monica Bru's Wiffle location serving a modern take on classic breakfast brunch, and lunch fare. Woman owned founder, Ebru Fidan Caplan, was born and raised in Turkey where she learned the art of cooking through her family hotel and restaurant business. With several vegetarian and vegan menu options, such as the Turkish inspired “menemen”, everything is made from scratch, using whole food ingredients. Items from EWG’s dirty dozen list like berries, greens and tomatoes are Certified Organic by the USDA.
In addition to serving in reusable dishware for inhouse dining, Flapjax abides by Santa Monica’s Disposable Food Service Ware ordinance by procuring to-go containers made from marine-degradable natural fiber materials that can be composted in the City’s Commercial Organics Recycling program. To be in line with AB 1276, condiment packets and unbundled disposable utensils, straws etc., are provided only upon customer request for to-go orders. Water conservation measures include installing high efficiency faucets for hand-washing that flow at 0.5 gallons per minute.
Along with posting clear signage English and Spanish detailing materials accepted in each bin, all employees received training from Sustainable Works on properly sorting materials for recycling (blue) and organics/ composting (green). All of these efforts contribute to Flapjax Diner successfully diverting close to 90% of their waste stream from ending up in landfill.
To help preserve Santa Monica’s tree canopy, Flapjax' outdoor dining patio was built around an existing tree. Ebru understands the importance to build with nature when renovating a space. Typically for urban cities, ninety percent of tree canopy is on private property. Trees are important to keep around as they provide shade, clean the air, collect rainwater and connect us to nature.
